It is obtained directly from olives and solely by mechanical means. Arbequina olive oil pairs particularly well with vegetables such as artichoke and asparagus, or mix with a little lemon juice to make a dressing for avocado. Also drizzle the extra virgin olive oil over white fish or chicken dishes just before serving.
